The patented AIR TRAP SYSTEM® uses the hot air that accumulates in
the dome to create an air barrier in front of the oven mouth,
retaining heat inside the cooking chamber. The advantages of this
innovative system (compared to a dome oven without the AIR TRAP
SYSTEM® patent):

reduced by up to 20% for daily production cycles of eight hours
and consumption up to 30% less for daily production cycles
exceeding eight hours.
